Cinnamon Roll Cheesecake with Wine & Berries and Peach & Mango Topping

Ingredients:

  • 1 can cinnamon rolls with icing (8 rolls)
  • 2 containers Norman's Kosher Cholov Yisroel Cream Cheese (16 oz.)
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup red wine
  • 1/4 cup mixed berries (strawberries, raspberries, blackberries)
  • 1 peach, peeled and sliced
  • 1 mango, peeled and sliced
  • 1 tbsp honey

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Grease a 9-inch springform pan.
  3. Unroll cinnamon rolls and press into bottom and slightly up sides of prepared springform pan.
  4. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
  5. Add eggs and vanilla, and beat until well combined.
  6. Stir in red wine and mixed berries.
  7. Pour mixture over cinnamon roll crust.
  8. Bake for 25-30 minutes, or until cheesecake is set and slightly golden brown on top. Let cool.
  9. In a small saucepan, combine sliced peach, sliced mango, and honey. Cook over low heat until fruit is softened, about 5-7 minutes.
  10. Spread fruit mixture over cheesecake.
  11. Drizzle with icing from cinnamon roll package.
  12. Refrigerate until chilled, about 1 hour.
