Cinnamon Roll Cheesecake with Wine & Berries and Peach & Mango Topping
Ingredients:
- 1 can cinnamon rolls with icing (8 rolls)
- 2 containers Norman's Kosher Cholov Yisroel Cream Cheese (16 oz.)
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup red wine
- 1/4 cup mixed berries (strawberries, raspberries, blackberries)
- 1 peach, peeled and sliced
- 1 mango, peeled and sliced
- 1 tbsp honey
Instructions:
- Preheat oven to 350 degrees F.
- Grease a 9-inch springform pan.
- Unroll cinnamon rolls and press into bottom and slightly up sides of prepared springform pan.
- In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
- Add eggs and vanilla, and beat until well combined.
- Stir in red wine and mixed berries.
- Pour mixture over cinnamon roll crust.
- Bake for 25-30 minutes, or until cheesecake is set and slightly golden brown on top. Let cool.
- In a small saucepan, combine sliced peach, sliced mango, and honey. Cook over low heat until fruit is softened, about 5-7 minutes.
- Spread fruit mixture over cheesecake.
- Drizzle with icing from cinnamon roll package.
- Refrigerate until chilled, about 1 hour.
