Pistachio Dream Cheesecake
Ingredients:
- 1 1/2 cups almond flour
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 containers of Norman's Kosher Cholov Yisroel Cream Cheese (8oz each)
- 1/2 cup granulated sugar
- 2 eggs
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup shelled pistachios, roughly chopped for garnish
- 1/2 teaspoon sea salt for topping
Instructions:
- Preheat the oven to 350°F (180°C).
- For the crust, combine the almond flour, sugar, and melted butter in a bowl. Mix until well combined.
- Press the mixture onto the bottom of a 9-inch (23cm) springform pan. Bake for 10 minutes, then set aside to cool.
- To make the filling, beat the cream cheese and sugar with an electric mixer until smooth.
- Add the eggs one at a time, beating well after each addition.
- Stir in the finely chopped pistachios, heavy cream, and vanilla extract until well combined.
- Pour the mixture over the crust, then bake for 30-35 minutes or until the edges are golden brown and the center is set.
- Cool the cheesecake completely, then refrigerate for at least 2 hours or overnight.
- Before serving, sprinkle the roughly chopped pistachios over the top of the cheesecake. Finish with a sprinkle of sea salt.
