Pistachio Dream Cheesecake

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 containers of Norman's Kosher Cholov Yisroel Cream Cheese (8oz each)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup shelled pistachios, roughly chopped for garnish
  • 1/2 teaspoon sea salt for topping

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. For the crust, combine the almond flour, sugar, and melted butter in a bowl. Mix until well combined.
  3. Press the mixture onto the bottom of a 9-inch (23cm) springform pan. Bake for 10 minutes, then set aside to cool.
  4. To make the filling, beat the cream cheese and sugar with an electric mixer until smooth.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the finely chopped pistachios, heavy cream, and vanilla extract until well combined.
  7. Pour the mixture over the crust, then bake for 30-35 minutes or until the edges are golden brown and the center is set.
  8. Cool the cheesecake completely, then refrigerate for at least 2 hours or overnight.
  9. Before serving, sprinkle the roughly chopped pistachios over the top of the cheesecake. Finish with a sprinkle of sea salt.
