Pistachio Salted Caramel Cheesecake

Ingredients:

  • 8 oz Pistachio Crumbs
  • 2 containers of 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup Granulated Sugar
  • 2 Tbsp All-Purpose Flour
  • 2 tsp Vanilla Extract
  • 1/2 cup Salted Caramel Sauce
  • 2 Large Eggs, room temperature
  • 1/2 cup Heavy Cream
  • 1/2 tsp Salt
  • 1 cup Whipped Cream
  • 1/4 cup Cherries, pitted and halved

Instructions:

  1. Preheat oven to 350°F (180°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix together Pistachio Crumbs and 2 Tbsp of melted butter. Press mixture into the bottom of the prepared pan.
  3. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and Granulated Sugar with an electric mixer on medium-high speed until smooth.
  4. Beat in All-Purpose Flour and Vanilla Extract.
  5. Beat in Salted Caramel Sauce.
  6. Beat in Eggs one at a time, mixing just until incorporated after each addition.
  7. Stir in Heavy Cream and Salt.
  8. Pour the mixture over the Pistachio Crumbs crust.
  9. Bake for 40-45 minutes, until the edges are set and the center is slightly jiggly.
  10. Cool the cheesecake to room temperature before refrigerating for at least 4 hours or overnight.
  11. Before serving, top with Whipped Cream and Cherries.
