Hemp Hearts Cheesecake with Olive Oil & Citrus

Ingredients:

  • 1 1/2 cups shelled hemp hearts
  • 1/2 cup pitted dates
  • 1/4 cup coconut oil, melted
  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup honey
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon vanilla extract
  • Pinch of salt
  • 1 blood orange, sliced
  • 1 grapefruit, peeled and segmented
  • 2 tablespoons honey

Instructions:

  1. Preheat oven to 350°F.
  2. Pulse hemp hearts and dates together in a food processor until a crumbly mixture forms.
  3. Stir in melted coconut oil until mixture is sticky and holds together when pressed between your fingers.
  4. Press mixture into bottom of a 9-inch springform pan and bake for 8-10 minutes or until lightly golden brown. Allow to cool.
  5. Using an electric mixer, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  6. Add honey, olive oil, lemon juice, vanilla extract, and salt. Mix until fully incorporated.
  7. Pour olive oil and cream cheese mixture over cooled crust and smooth the top with a spatula. Chill in the refrigerator for at least 3 hours.
  8. For the topping, toss sliced blood orange and grapefruit segments with honey in a bowl.
  9. Arrange fruit on top of cheesecake before serving.
