Oatmeal Raisin Cheesecake with Greek Yogurt & Mocha Latte Topping
Ingredients:
1 1/2 cups oatmeal raisin cookies, finely ground
1/2 cup unsalted butter, melted
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
1/2 cup Greek yogurt
1/4 cup honey
2 eggs
1/4 cup strong brewed coffee
1/4 cup heavy cream
1 tbsp cocoa powder
1/4 cup semi-sweet chocolate chips
Instructions:
Preheat oven to 325°F.
Combine the ground oatmeal raisin cookies and melted butter in a bowl. Press the mixture into the bottom of a greased 9-inch springform pan and bake for 10 minutes. Let cool.
In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add in the Greek yogurt, honey, and eggs, and mix until well combined.
Pour the cheesecake filling over the prepared crust and bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly. Let cool to room temperature.
In a small saucepan, heat the brewed coffee, heavy cream, cocoa powder, and chocolate chips over low heat, stirring constantly until the chocolate is melted and the mixture is smooth. Let cool for a few minutes.
Pour the mocha latte topping over the cheesecake and refrigerate for at least 2 hours, or until firm. Serve chilled.
