Say cheese! Meet your new personalized cheesecake recipe:

Almond Joy Cheesecake

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 3 containers Norman's Kosher Cholov Yisroel Cream Cheese, 8 oz each
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 cup mixed fresh berries, for topping
  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions:

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine the almond flour, 1/4 cup granulated sugar, and melted butter until well combined.
  3. Press the mixture onto the bottom of a 9-inch springform pan. Chill in the refrigerator for 10 minutes.
  4. In a large bowl, beat the cream cheese and 1 cup granulated sugar until smooth and creamy.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Stir in the vanilla and almond extracts.
  7. Pour the mixture onto the chilled crust and smooth the top.
  8. Bake for 40-45 minutes or until the cheesecake is set but still slightly jiggly in the center.
  9. Let it cool completely on a wire rack.
  10. Once cooled, spread the mixed fresh berries over the top of the cheesecake.
  11. In a mixing bowl, beat the heavy cream and powdered sugar together until stiff peaks form.
  12. Spoon or pipe the whipped cream over the berries.
  13. Chill the cheesecake in the refrigerator for a few hours before serving.
