Almond Joy Cheesecake
Ingredients:
- 1 1/2 cups almond flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 3 containers Norman's Kosher Cholov Yisroel Cream Cheese, 8 oz each
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 cup mixed fresh berries, for topping
- 1 cup heavy cream
- 2 tbsp powdered sugar
Instructions:
- Preheat your oven to 350°F.
- In a mixing bowl, combine the almond flour, 1/4 cup granulated sugar, and melted butter until well combined.
- Press the mixture onto the bottom of a 9-inch springform pan. Chill in the refrigerator for 10 minutes.
- In a large bowl, beat the cream cheese and 1 cup granulated sugar until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla and almond extracts.
- Pour the mixture onto the chilled crust and smooth the top.
- Bake for 40-45 minutes or until the cheesecake is set but still slightly jiggly in the center.
- Let it cool completely on a wire rack.
- Once cooled, spread the mixed fresh berries over the top of the cheesecake.
- In a mixing bowl, beat the heavy cream and powdered sugar together until stiff peaks form.
- Spoon or pipe the whipped cream over the berries.
- Chill the cheesecake in the refrigerator for a few hours before serving.
