Ingredients:

  • 1 1/2 cups vanilla wafer crumbs
  • 1/3 cup unsalted butter, melted
  • 3 ripe bananas, mashed
  • 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 2 ripe avocados, peeled and pitted
  • 1/2 cup granulated sugar
  • 4 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup brandy
  • 1 cup cherries, pitted and halved
  • 1/4 cup brown sugar
  • 2 tbsp unsalted butter

Instructions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, mix together vanilla wafer crumbs and melted butter. Press mixture onto bottom of 9-inch springform pan. Bake for 10-12 minutes. Set aside to cool.
  3. In a blender or food processor, combine bananas, Norman's Kosher Cholov Yisroel Cream Cheese, avocados, granulated sugar, lime juice, vanilla extract, and salt. Process until smooth. Add eggs and process until just combined.
  4. Pour mixture onto cooled crust. Bake for 40 minutes or until the center is almost set. Let cool for 10 minutes.
  5. Meanwhile, in a medium saucepan, combine brandy, cherries, brown sugar, and unsalted butter over medium heat. Cook until cherries are soft and mixture thickens, about 10 minutes.
  6. Spread cherry topping over cheesecake. Refrigerate for at least 2 hours before serving.
