Bourbon Caramel Fudge Cheesecake
Ingredients:
- 1 1/2 cups vanilla wafer crumbs
- 1/3 cup unsalted butter, melted
- 2 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup caramel sauce, plus more for drizzling
- 3 tablespoons bourbon
- 1/2 teaspoon vanilla extract
- 1 cup fudge brownie chunks
Instructions
- Preheat the oven to 350°F. Grease the bottom and sides of a 9-inch springform pan with cooking spray.
- In a medium bowl, mix together vanilla wafer crumbs and melted butter until evenly combined. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth. Add the eggs and beat until well combined.
- Mix in the caramel sauce, bourbon, and vanilla extract. Pour the cheesecake mixture over the crust.
- Bake for 30-35 minutes or until the edges are lightly golden and the center is almost set.
- Remove the cheesecake from the oven and let cool for 10 minutes. Top with fudge brownie chunks and drizzle additional caramel sauce over the top.
- Chill in the refrigerator for at least 2 hours before serving.
