Bourbon Caramel Fudge Cheesecake

Ingredients:

  • 1 1/2 cups vanilla wafer crumbs
  • 1/3 cup unsalted butter, melted
  • 2 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup caramel sauce, plus more for drizzling
  • 3 tablespoons bourbon
  • 1/2 teaspoon vanilla extract
  • 1 cup fudge brownie chunks

Instructions

  1. Preheat the oven to 350°F. Grease the bottom and sides of a 9-inch springform pan with cooking spray.
  2. In a medium bowl, mix together vanilla wafer crumbs and melted butter until evenly combined. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth. Add the eggs and beat until well combined.
  4. Mix in the caramel sauce, bourbon, and vanilla extract. Pour the cheesecake mixture over the crust.
  5. Bake for 30-35 minutes or until the edges are lightly golden and the center is almost set.
  6. Remove the cheesecake from the oven and let cool for 10 minutes. Top with fudge brownie chunks and drizzle additional caramel sauce over the top.
  7. Chill in the refrigerator for at least 2 hours before serving.
