Say cheese! Meet your new personalized cheesecake recipe:

Oreo Vanilla Cheesecake with Berries & Cream Topping

Ingredients:

  • 24 Oreo cookies, crushed
  • 4 tbsp unsalted butter, melted
  • 2 containers (16 oz) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 4 large eggs
  • 1 cup heavy cream, divided
  • 1/2 cup mixed berries (raspberries, blueberries, and strawberries)

Instructions:

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed Oreos and melted butter until well combined. Press the mixture onto the bottom of a 9-inch springform pan.
  3. Bake for 8 minutes and then set aside to cool.
  4. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla extract with an electric mixer at medium speed until creamy and smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in 1/2 cup of heavy cream and mix until well blended.
  7. Pour the mixture over the cooled crust. Bake for 50-55 minutes, until the center is almost set.
  8. Cool the cheesecake at room temperature for 20 minutes before refrigerating for at least 4 hours or overnight.
  9. In a separate mixing bowl, beat 1/2 cup of heavy cream until stiff peaks form.
  10. Spoon the whipped cream on top of the chilled cheesecake and top with mixed berries.
