Whiskey Chocolate Quinoa Cheesecake Recipe

Ingredients:

  • 1 cup cooked quinoa
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 (8-ounce) container Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 cup sour cream
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup whiskey
  • 1/2 cup dark chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Directions:

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, mix together the cooked quinoa, melted butter, 2 tablespoons of granulated sugar, and kosher salt. Press the quinoa mixture into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes. Remove from the oven and set aside to cool.
  4. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add 1/2 cup of granulated sugar and 2 tablespoons of flour and beat until fluffy.
  5. Add the sour cream, eggs, vanilla extract, whiskey, and chocolate chips. Beat until well combined.
  6. Pour the filling over the quinoa crust.
  7. Bake for 45 minutes or until the center is set.
  8. Allow the cheesecake to cool to room temperature.
  9. In a large mixing bowl, beat the heavy cream and powdered sugar until soft peaks form.
  10. Spoon the whipped cream over the top of the cheesecake.
  11. Chill the cheesecake in the refrigerator for at least 2 hours before serving.
