Ingredients:

  • 2 cups Ginger Snap crumbs
  • 1/3 cup butter, melted
  • 4 containers (8oz each) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 1/4 cups sugar
  • 2 tablespoons cornstarch
  • 3 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1/3 cup fudge brownie mix
  • Whipped cream for topping (optional)

Instructions:

  1. Preheat oven to 350°F.
  2. In a bowl, combine Ginger Snap crumbs and melted butter. Press onto the bottom of a 9-inch springform pan.
  3. Beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
  4. Add cornstarch and mix well.
  5. Add eggs, one at a time, beating well after each addition.
  6. Blend in sour cream and vanilla.
  7. Pour mixture over crust.
  8. Bake for 50 minutes.
  9. Turn off oven. Leave cheesecake in oven with door closed for 30 minutes.
  10. Remove from oven, let it cool for 10 minutes. Remove rim from the pan.
  11. Melt fudge brownie mix and spread evenly over the top of cheesecake.
  12. Refrigerate for at least 4 hours or overnight.
  13. Top with whipped cream before serving (optional).
