Ingredients:
- 18 Oreo cookies, crushed
- 1/4 cup unsalted butter, melted
- 2 containers Norman's Kosher Cholov Yisroel Cream Cheese, softened (16 oz. total)
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup salted caramel sauce
- 1/2 cup fresh berries (strawberries, blueberries, raspberries)
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, mix together the crushed Oreo cookies and melted butter. Press this mixture into the bottom of the prepared springform pan.
- In a large bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth. Add the eggs one at a time, beating well after each addition.
- Stir in the salted caramel sauce.
- Pour the cream cheese mixture over the Oreo crust.
- Bake for about 45-50 minutes, or until the edges are set and the center is slightly jiggly.
- Let the cheesecake cool completely, then refrigerate for at least 4 hours, or overnight.
- Before serving, make the berry cream topping. In a medium bowl, beat the heavy cream and vanilla extract until stiff peaks form. Gently fold in the fresh berries.
- Spread the berry cream on top of the cheesecake.
- Serve and enjoy!
