Creamy Delight Cheesecake Recipe
Ingredients:
2 cups Graham cracker crumbs
1/4 cup Sugar
1/2 cup Unsalted Butter, melted
24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 1/2 cups Sugar
1/4 cup Whiskey
1/2 cup Semi-sweet Chocolate Chips, melted
4 Eggs
1/4 cup Espresso
1/2 cup Semi-sweet Chocolate Chips, for topping
Instructions:
Preheat oven to 325°F.
Mix the Graham cracker crumbs, sugar, and melted butter in a bowl. Mix well. Press this mixture into the bottom and 1 inch up the sides of a 9-inch springform pan.
In a large bowl, beat the cream cheese and sugar until smooth. Add in the whiskey and melted chocolate chips. Mix well.
Add eggs, one at a time, mixing on low speed until just combined. Be careful not to overmix.
Pour the cream cheese mixture onto the crust. Smooth the top with a spatula.
Bake the cheesecake for 50-55 minutes or until the center is almost set. Allow to cool at room temperature for 10 minutes.
Place the remaining chocolate chips in a small bowl with espresso. Microwave until chocolate is melted, stirring every 20 seconds. Be careful not to burn the chocolate.
Pour the chocolate and espresso mixture over the top of the cheesecake and smooth with a spatula.
Refrigerate the cheesecake for at least 4 hours or overnight.
