Ingredients:

  • 2 cups vanilla wafer crumbs
  • 6 tablespoons unsalted butter, melted
  • 3 (8 oz) containers Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1 cup marshmallows, melted

Instructions:

  1. Preheat the oven to 325°F.
  2. Mix the vanilla wafer crumbs and melted butter together and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let it cool.
  3. Meanwhile, beat the softened cream cheese, sugar, and vanilla extract in a large bowl until smooth.
  4. Add the eggs, one at a time, beating well after each addition. Pour the cheesecake filling over the vanilla wafer crust.
  5. Bake the cheesecake for 50 minutes or until the center is almost set. Cool completely on a wire rack.
  6. Melt the marshmallows in the microwave and pour over the cooled cheesecake.
  7. Store the cheesecake in the refrigerator for at least 4 hours or overnight.
  8. Serve and enjoy!
