Ingredients:
- 2 cups vanilla wafer crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup apricot preserves
- 1/2 cup water

Instructions:
- Preheat oven to 325°F.
- Mix together crumbs, sugar and melted butter in a small bowl. Press firmly onto bottom and 1 inch up side of a 9-inch springform pan and bake for 10 minutes.
