Ingredients:

  • 2 cups vanilla wafer crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup apricot preserves
  • 1/2 cup water
  • 2 cups assorted fresh fruit

Instructions:

  1. Preheat oven to 325°F.
  2. Mix together crumbs, sugar and melted butter in a small bowl. Press firmly onto bottom and 1 inch up side of a 9-inch springform pan and bake for 10 minutes.
  3. Beat cream cheese, sugar and vanilla extract in large bowl with electric mixer at medium speed until well blended. Add eggs, one at a time, beating well after each addition.
  4. Pour mixture over prepared crust.
  5. Bake for 50 minutes or until center is almost set.
  6. Cool completely on wire rack before refrigerating.
  7. Meanwhile, heat apricot preserves and water in small saucepan until melted.
  8. Arrange fruit on top of cheesecake, brush with apricot glaze.
  9. Refrigerate for at least 4 hours or until set.

Tips:

For a more colorful topping, mix blueberries, strawberries, and kiwi together and top cheesecake with mixture instead of assorted fresh fruit.
