Lemon Mint Chocolate Cheesecake Recipe
Ingredients:
- 1 package of Lemon Bar mix
- 2 containers of Norman's Kosher Cholov Yisroel Cream Cheese (16 oz total)
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 3/4 cup whole milk
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup mint chocolate chips, melted
- 1 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F.
- Prepare Lemon Bar mix according to package instructions.
- Pour mixture into a greased 9-inch springform pan and bake for 15-20 minutes or until golden brown.
- In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and flour until smooth.
- Add milk, eggs, and vanilla extract to the cream cheese mixture and beat until well combined.
- Stir in melted mint chocolate chips and pour the mixture over the Lemon Bar base.
- Bake for 40-45 minutes or until the cheesecake is set in the center.
- Cool the cheesecake to room temperature, then chill in the refrigerator for at least 2 hours.
- In a small saucepan, heat heavy cream over low heat until it simmers.
- Remove from heat and stir in semi-sweet chocolate chips until melted and combined.
- Pour the chocolate ganache over the chilled cheesecake.
- Refrigerate cheesecake for at least an hour before slicing and serving.
