Lemon Mint Chocolate Cheesecake Recipe

Ingredients:

  • 1 package of Lemon Bar mix
  • 2 containers of Norman's Kosher Cholov Yisroel Cream Cheese (16 oz total)
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 3/4 cup whole milk
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup mint chocolate chips, melted
  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F.
  2. Prepare Lemon Bar mix according to package instructions.
  3. Pour mixture into a greased 9-inch springform pan and bake for 15-20 minutes or until golden brown.
  4. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and flour until smooth.
  5. Add milk, eggs, and vanilla extract to the cream cheese mixture and beat until well combined.
  6. Stir in melted mint chocolate chips and pour the mixture over the Lemon Bar base.
  7. Bake for 40-45 minutes or until the cheesecake is set in the center.
  8. Cool the cheesecake to room temperature, then chill in the refrigerator for at least 2 hours.
  9. In a small saucepan, heat heavy cream over low heat until it simmers.
  10. Remove from heat and stir in semi-sweet chocolate chips until melted and combined.
  11. Pour the chocolate ganache over the chilled cheesecake.
  12. Refrigerate cheesecake for at least an hour before slicing and serving.
