Combine all crust ingredients in a bowl and mix well. Press the mixture into the bottom of a 9-inch springform pan and set aside.
In a large mixing bowl, beat softened cream cheese until smooth. Add coconut milk, honey, chia seeds, and vanilla extract. Mix until well combined.
Pour filling mixture over the crust. Bake for 40-45 minutes, or until the cheesecake is set.
Let the cheesecake cool completely before removing it from the springform pan.
For the topping, combine sliced blood oranges and grapefruit in a bowl. Add honey and melted coconut oil, and toss together evenly. Serve on top of the cheesecake slices.
