Cheesecake Delight
Ingredients
- 1 cup Chia Seeds
- 1/2 cup Almond Flour
- 1/3 cup Coconut Oil, melted
- 2 containers Norman's Kosher Cholov Yisroel Cream Cheese (16 oz total), softened
- 2 cups Greek Yogurt
- 1/2 cup Honey
- 1 teaspoon Vanilla Extract
- 1 cup Mixed Berries, for topping
- 1/2 cup Heavy Cream, whipped, for topping
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, combine Chia Seeds, Almond Flour, and melted Coconut Oil. Mix well.
- Press mixture onto the bottom of a 9-inch springform pan. Bake for 10-12 minutes or until lightly golden brown.
- In a separate mixing bowl, beat softened Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
- Add in Greek Yogurt, Honey, and Vanilla Extract. Mix until well combined.
- Pour mixture over the Chia Seed base. Smooth the top with a spatula.
- Bake for 25-30 minutes or until the edges are set and the center is just slightly jiggly.
- Remove from oven and cool to room temperature. Chill in the refrigerator for at least an hour.
- Before serving, top the cheesecake with mixed Berries and whipped Heavy Cream.
