Cheesecake Delight
Graham Cracker Base
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted unsalted butter
Tiramisu Filling
- 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1/4 cup brewed coffee, cooled
- 1 tbsp cocoa powder
Orange & Vanilla Topping
- 1/2 cup freshly squeezed orange juice
- 2 tbsp cornstarch
- 1/4 cup honey
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350°F.
- Mix graham cracker crumbs, sugar, melted butter, and press into bottom of 9-inch springform pan.
- Bake crust for 10 minutes, or until lightly golden.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs, vanilla extract and heavy cream, and beat until well combined.
- Pour half the mixture over the crust and smooth the top.
- In a small bowl, mix together coffee and cocoa powder and pour over the mixture in the pan.
- Pour remaining cheesecake mixture over the coffee layer.
- Bake for 50-55 minutes or until set.
- While the cheesecake is baking, combine orange juice, cornstarch, and honey in a small saucepan.
- Bring to a simmer over low heat and cook until thickened, stirring constantly.
- Remove from heat and stir in vanilla extract.
- Let the cheesecake cool completely before topping it with the orange & vanilla sauce.
- Chill in the refrigerator for at least 2 hours before serving.
