Cheesecake Delight

Graham Cracker Base

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted unsalted butter

Tiramisu Filling

  • 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1/4 cup brewed coffee, cooled
  • 1 tbsp cocoa powder

Orange & Vanilla Topping

  • 1/2 cup freshly squeezed orange juice
  • 2 tbsp cornstarch
  • 1/4 cup honey
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F.
  2. Mix graham cracker crumbs, sugar, melted butter, and press into bottom of 9-inch springform pan.
  3. Bake crust for 10 minutes, or until lightly golden.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs, vanilla extract and heavy cream, and beat until well combined.
  6. Pour half the mixture over the crust and smooth the top.
  7. In a small bowl, mix together coffee and cocoa powder and pour over the mixture in the pan.
  8. Pour remaining cheesecake mixture over the coffee layer.
  9. Bake for 50-55 minutes or until set.
  10. While the cheesecake is baking, combine orange juice, cornstarch, and honey in a small saucepan.
  11. Bring to a simmer over low heat and cook until thickened, stirring constantly.
  12. Remove from heat and stir in vanilla extract.
  13. Let the cheesecake cool completely before topping it with the orange & vanilla sauce.
  14. Chill in the refrigerator for at least 2 hours before serving.
