Acai Berry Wine & Berries Cheesecake
Ingredients
- Crust: 1 ½ cups graham cracker crumbs, ¼ cup Acai berry puree, 1 ½ tablespoons sugar, ¼ cup unsalted butter, melted
- Filling: 24 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened, 1 cup sugar, 1 teaspoon vanilla extract, 3 eggs, ¾ cup wine, ½ cup mixed berries, mashed
- Topping: 1 cup mixed berries, 1 cup sour cream, 2 tablespoons sugar, 1 teaspoon vanilla extract
Instructions
- Crust: Preheat oven to 350°F. In a mixing bowl, combine graham cracker crumbs, Acai berry puree, sugar, and melted butter. Mix well and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and remove from oven to cool.
- Filling: In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla, mixing well. Add the eggs, one at a time, mixing well after each addition. Stir in the wine and mashed mixed berries. Pour the mixture over the crust.
- Bake: Bake the cheesecake at 350°F for 45 to 50 minutes or until the center is almost set. Remove from the oven and cool for 15 minutes.
- Topping: Mix the sour cream, sugar, and vanilla extract together. Spread evenly over the top of the cheesecake. Top with mixed berries. Refrigerate for at least 4 hours or overnight for best results.
