Banana Nut Cheesecake with Berries & Cream Topping
Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup chopped walnuts
1/4 cup sugar
6 tbsp unsalted butter, melted
3 medium bananas, mashed
16 oz Norman's Kosher Cholov Yisroel Cream Cheese
1 cup sugar
4 large eggs
1 tsp vanilla extract
1/4 cup all-purpose flour
1/2 cup sour cream
1 cup mixed berries (strawberries, raspberries, blueberries)
1 cup heavy cream
1 tbsp sugar
Instructions:
Preheat oven to 350°F.
In a medium bowl, combine graham cracker crumbs, chopped walnuts, 1/4 cup sugar, and melted butter. Mix well and press into the bottom of a 9-inch springform pan.
Bake the crust for 8-10 minutes until golden brown and set aside to cool completely.
In a large bowl, beat the mashed bananas and Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
Add 1 cup of sugar and beat until well combined.
Add the eggs one at a time, beating well after each addition.
Add vanilla extract and flour, and beat until well combined.
Add sour cream and beat until just combined.
Pour the mixture over the cooled crust and smooth the top with a spatula.
Bake for 30-35 minutes, until the edges are set but the center is still slightly jiggly.
Remove from the oven and let cool completely before refrigerating for at least 4 hours or overnight.
Before serving, mix the berries together in a small bowl.
In a medium bowl, whip the heavy cream and 1 tbsp sugar until stiff peaks form.
Spoon the mixed berries over the top of the cheesecake and pipe or spoon the whipped cream around the edges.
