Pulse Acai granola in a food processor until finely ground. Transfer to a bowl and stir in melted butter. Press mixture firmly onto bottom of a 9-inch springform pan.
In a large bowl, beat cream cheese until smooth and creamy. Add Greek yogurt, honey, eggs, sugar, and vanilla, and beat until well combined.
Pour filling into crust. Bake for 55-60 minutes or until center is almost set.
Turn off oven and let cheesecake sit in oven with door propped open for 10 minutes.
Remove from oven and allow to cool completely on a wire rack.
Refrigerate for at least 4 hours or overnight until cheesecake is set.
