- 4 eggs
- 1/4 cup balsamic reduction
- 1 cup fresh strawberries, pureed
- Toffee Crunch Topping:
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/4 cup butter, room temperature
- 1/2 cup toffee bits
Directions
- Preheat oven to 350°F (175°C).
- Pistachio Crumble Base: Mix graham cracker crumbs, ground pistachios, brown sugar, and melted butter together in a bowl. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes. Set aside to cool.
- Balsamic & Strawberry Filling: In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar together until smooth. Add in eggs one at a time, making sure to blend well after each addition. Stir in balsamic reduction and strawberry puree until well mixed. Pour mixture over the cooled crust.
- Toffee Crunch Topping: Combine brown sugar, flour, and butter in a small bowl until crumbly. Stir in toffee bits. Sprinkle mixture over the cheesecake.
- Bake for 45-50 minutes or until the center is almost set. Allow to cool completely, then refrigerate for at least 4 hours or overnight.
