Whiskey Chocolate Caramel Cheesecake

Ingredients
- 24 Oreo cookies, crushed
- 6 tablespoons unsalted butter, melted
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1/3 cup Irish whiskey
- 4 large eggs, room temperature
- 6 oz semisweet chocolate chips, melted
- 1/4 cup heavy cream
- 1/4 cup caramel sauce
- Whipped cream and chocolate shavings, for garnish
Directions
- Preheat oven to 350°F. Wrap the outside of a 9-inch springform pan with aluminum foil.
- In a mixing bowl, combine crushed Oreo cookies and melted butter. Press the mixture into the bottom of the pan.
- In a separate mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and sugar until creamy. Add in sour cream and whiskey, mix well.
- Beat in eggs one at a time until just blended. Fold in melted chocolate and heavy cream until smooth.
- Pour the mixture on top of the crust.
- Bake for 50-60 minutes or until the center is almost set. Turn off the heat, leave the cheesecake in the oven for 30 minutes to set.
- Remove the cheesecake from the oven and allow it to cool completely. Chill in the refrigerator for at least 4 hours or overnight.
- Pour caramel sauce over the top of the chilled cheesecake. Add whipped cream and chocolate shavings as desired.
