Cheesy Sweet Potato Delight

Ingredients:

  • 1 cup Parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • 6 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 1 cup sweet potato puree
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon nutmeg, freshly grated
  • 3 large eggs, room temperature
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup crumbled Feta cheese
  • salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine Parmesan cheese, breadcrumbs, melted butter, and garlic powder.
  3. Press the mixture into the bottom of a greased 9-inch springform pan.
  4. Bake for 10 minutes or until golden brown. Allow to cool while preparing the filling.
  5. Beat cream cheese, sweet potato puree, sugar, vanilla extract, nutmeg, salt, and pepper using an electric mixer or food processor.
  6. Add eggs, one at a time, and beat until just combined.
  7. Pour batter over the crust and bake for 40-45 minutes or until set and the edges are lightly golden brown.
  8. Allow to cool before topping it with roasted red peppers and Feta cheese.
  9. Cover and refrigerate for at least 4 hours before serving.
