Cheesy Sweet Potato Delight
Ingredients:
- 1 cup Parmesan cheese, grated
- 1/2 cup breadcrumbs
- 6 tablespoons unsalted butter, melted
- 1/2 teaspoon garlic powder
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
- 1 cup sweet potato puree
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon nutmeg, freshly grated
- 3 large eggs, room temperature
- 1/2 cup roasted red peppers, chopped
- 1/2 cup crumbled Feta cheese
- salt and pepper to taste
Instructions:
- Preheat oven to 350°F (175°C).
- In a bowl, combine Parmesan cheese, breadcrumbs, melted butter, and garlic powder.
- Press the mixture into the bottom of a greased 9-inch springform pan.
- Bake for 10 minutes or until golden brown. Allow to cool while preparing the filling.
- Beat cream cheese, sweet potato puree, sugar, vanilla extract, nutmeg, salt, and pepper using an electric mixer or food processor.
- Add eggs, one at a time, and beat until just combined.
- Pour batter over the crust and bake for 40-45 minutes or until set and the edges are lightly golden brown.
- Allow to cool before topping it with roasted red peppers and Feta cheese.
- Cover and refrigerate for at least 4 hours before serving.
