Blissful Berry Avocado Cheesecake
Date & Walnut Base
- 1 cup pitted dates
- 1 cup walnuts
- 1/4 tsp cinnamon
- 1/4 tsp salt
Avocado & Lime Filling
- 16 oz containers of Norman's Kosher Cholov Yisroel Cream Cheese
- 2 ripe avocados
- 1/2 cup honey
- 1/3 cup fresh lime juice
- 1 tsp vanilla extract
Berries & Cream Topping
- 1 cup mixed berries
- 1 cup heavy cream
- 1 tbsp honey
Instructions
- Preheat the oven to 350 F
- In a food processor, combine the dates, walnuts, cinnamon, and salt. Pulse until everything is chopped and combined.
- Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove and set aside to cool.
- In a large bowl, beat the cream cheese until smooth.
- Add in the avocados, honey, lime juice, and vanilla extract and beat until well combined and smooth.
- Pour the filling over the cooled crust and smooth the top with a spatula.
- Refrigerate for at least 2 hours.
- Before serving, whip the cream, honey, and vanilla together until peaks form.
- Top with mixed berries and whipped cream, and serve chilled.
