Cinnamon-Tiramisu Cheesecake with Macadamia Nut Topping

Ingredients:

  • 1 cup cinnamon roll dough (homemade or store-bought)
  • 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1/4 cup strong brewed coffee
  • 1/4 cup Kahlua or other coffee liquor
  • 1 cup heavy cream, whipped
  • 1/2 cup macadamia nuts, chopped
  • 3 tbsp brown sugar
  • 3 tbsp butter, melted

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Roll out cinnamon roll dough and press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat together cream cheese and sugar until smooth.
  4. Beat in eggs, one at a time, until fully incorporated.
  5. Add vanilla extract, brewed coffee, and coffee liquor, and beat until smooth.
  6. Gently fold in whipped cream, being careful not to deflate it.
  7. Pour mixture over the cinnamon dough base and smooth out the top with a spatula.
  8. In a small bowl, mix together chopped macadamia nuts, brown sugar, and melted butter.
  9. Sprinkle the nut mixture over the cheesecake batter.
  10. Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
  11. Allow the cheesecake to cool completely before refrigerating for at least 2 hours or until fully chilled.
  12. Serve and enjoy!
