Cinnamon-Tiramisu Cheesecake with Macadamia Nut Topping
Ingredients:
- 1 cup cinnamon roll dough (homemade or store-bought)
- 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1/4 cup strong brewed coffee
- 1/4 cup Kahlua or other coffee liquor
- 1 cup heavy cream, whipped
- 1/2 cup macadamia nuts, chopped
- 3 tbsp brown sugar
- 3 tbsp butter, melted
Instructions:
- Preheat oven to 350 degrees F.
- Roll out cinnamon roll dough and press into the bottom of a 9-inch springform pan.
- In a large bowl, beat together cream cheese and sugar until smooth.
- Beat in eggs, one at a time, until fully incorporated.
- Add vanilla extract, brewed coffee, and coffee liquor, and beat until smooth.
- Gently fold in whipped cream, being careful not to deflate it.
- Pour mixture over the cinnamon dough base and smooth out the top with a spatula.
- In a small bowl, mix together chopped macadamia nuts, brown sugar, and melted butter.
- Sprinkle the nut mixture over the cheesecake batter.
- Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
- Allow the cheesecake to cool completely before refrigerating for at least 2 hours or until fully chilled.
