Acai Sweet Potato Cheesecake with Pineapple Kiwi Topping

Ingredients:

  • 1 cup Acai Berry puree
  • 2 cups Sweet Potato puree
  • 1 cup Maple syrup
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

  • 1 cup Pineapple chunks
  • 1 cup Kiwi chunks
  • 1/4 cup sugar

Instructions:

  1. Preheat oven to 350°F.
  2. In a food processor, combine Acai Berry puree and Sweet Potato puree. Pulse until smooth.
  3. Add Norman's Kosher Cholov Yisroel Cream Cheese to the food processor and blend until creamy.
  4. Add in maple syrup, eggs, vanilla extract, cinnamon, and nutmeg. Blend until ingredients are well combined.
  5. Pour mixture into a greased 9-inch springform pan. Bake for 45-50 minutes or until the center is set. Remove from the oven and let cool on the counter to room temperature.
  6. To make the topping, combine pineapple, kiwi, and sugar in a small saucepan over medium heat. Cook until sugar has melted and the mixture has thickened slightly. Cool to room temperature before topping cheesecake with the mixture.
  7. Refrigerate for at least 2 hours before slicing and serving.
