Ingredients:

  • 1 1/2 cups Graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 3 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup peach preserves
  • 1/2 cup mango chunks

Instructions:

  1. Preheat the oven to 350°F.
  2. Combine Graham cracker crumbs and melted butter. Press onto the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese with sugar until light and fluffy.
  4. Beat in eggs, one at a time, on low speed. Add vanilla extract and mix well.
  5. Pour the cheesecake mixture into the prepared crust. Bake for 45-50 minutes or until the center is almost set.
  6. Remove from oven and let it cool for 10 minutes before running a knife around the edge of the pan to loosen the cheesecake. Let it cool completely before refrigerating.
  7. In a saucepan, heat peach preserves and mango chunks until smooth. Spread over cooled cheesecake. Refrigerate until serving time.
