PB Bliss Cheesecake

Ingredients:

  • 1 cup flour
  • 1/2 cup semolina flour
  • 1/2 cup coconut flakes
  • 1/2 cup sugar
  • 1/2 cup melted unsalted butter
  • 1/2 cup plain yogurt
  • 1 tsp baking soda
  • 1 container Norman's Kosher Cholov Yisroel Cream Cheese (8 oz)
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup creamy peanut butter
  • 1/2 cup chopped peanut butter cups

Directions:

  1. Preheat oven to 350°F.
  2. Mix together the flour, semolina flour, coconut flakes, sugar, melted butter, yogurt, and baking soda in a bowl.
  3. Press the mixture into the bottom of an 8" springform pan.
  4. Bake for 20-25 minutes or until lightly browned. Let cool.
  5. Cream together the cream cheese and sugar until smooth.
  6. Add the eggs one at a time, beating well after each addition.
  7. Stir in the vanilla extract and peanut butter.
  8. Pour the cheesecake mixture over the cooled Basbousa base.
  9. Bake for 30 minutes or until set.
  10. Remove from oven and let cool to room temperature.
  11. Sprinkle the chopped peanut butter cups over the top.
  12. Chill in the refrigerator for at least 2 hours before serving.
