Cheesecake Nirvana
Ingredients:
2 cups Buttermilk Biscuit crumbs
1/3 cup butter, melted
1/4 cup granulated sugar
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup mascarpone cheese
1 cup confectioners' sugar
1 tsp vanilla extract
4 eggs
1/3 cup espresso, cooled
1/4 cup coffee liqueur
1 cup heavy cream, whipped
1/2 cup toffee bits
Instructions:
Preheat oven to 325°F (165°C). Grease a 9-inch springform pan with butter.
In a bowl, mix together biscuit crumbs, melted butter, and granulated sugar. Press mixture into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
In a large bowl, blend Norman's Kosher Cholov Yisroel Cream Cheese, mascarpone cheese, confectioners' sugar, and vanilla extract. Add eggs one at a time, blending thoroughly after each addition. Beat in cooled espresso and coffee liqueur.
Pour the mixture over the cooled crust. Bake for 45 minutes or until edges are set and center is almost set, but slightly jiggly. Let it cool for at least an hour before transferring to the refrigerator to chill for at least 4 hours.
