Ingredients:

  • 8 oz Pistachio Crumbles
  • 3 containers (24 oz total) of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1/2 cup Pistachios, chopped and roasted (for topping)
  • 1/4 tsp sea salt (for topping)

Instructions:

  1. Preheat oven to 325°F.
  2. In a mixing bowl, combine the Pistachio Crumbles and 4 oz of Norman's Kosher Cholov Yisroel Cream Cheese. Mix thoroughly and press into the bottom of a greased 9-inch springform pan.
  3. In a separate bowl, beat the remaining 20 oz of Norman's Kosher Cholov Yisroel Cream Cheese until smooth.
  4. Add sugar and vanilla extract to the cream cheese mixture and mix well.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in the chopped Pistachios.
  7. Pour the mixture over the Pistachio Crumble base in the springform pan.
  8. Bake for 50-60 minutes, or until the center is almost set.
  9. Turn off the oven and leave the cheesecake inside for an hour.
  10. Remove from oven and let cool completely.
  11. Refrigerate for at least 3 hours or overnight.
  12. Before serving, sprinkle the roasted and chopped pistachios on top of the cheesecake and sprinkle sea salt over it as well.
