Maple Caramel Macchiato Cheesecake

Ingredients:

  • 10 oz Oreo cookies, crushed
  • 6 tbsp unsalted butter, melted
  • 32 oz Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup granola
  • 1/4 cup pure maple syrup
  • 1 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 cup dulce de leche
  • 1/4 cup strong brewed coffee

Instructions:

  1. Preheat the oven to 350°F.
  2. In a bowl, combine the crushed Oreo cookies and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Set aside.
  3. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add the granulated sugar and beat until combined.
  4. Beat in the eggs one at a time, being sure to mix well after each addition.
  5. Add the granola, maple syrup, all-purpose flour, and vanilla extract. Beat until well combined.
  6. Pour the mixture over the Oreo crust in the prepared springform pan. Smooth out the top with a spatula.
  7. Bake for 50-55 minutes, or until the cheesecake is set and the edges are golden brown. Remove from oven and let cool to room temperature.
  8. In a small bowl, mix together the dulce de leche and strong brewed coffee until smooth. Pour over the cooled cheesecake.
  9. Refrigerate the cheesecake for at least 2 hours, or overnight, before serving.
