Graham cracker base

  • 1 1/2 cups Graham cracker crumbs
  • 1/4 cup sugar
  • 6 tbsp melted butter

Wine & Berries Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup sugar
  • 4 large eggs
  • 1/4 cup dry red wine
  • 1 cup mixed berries (strawberries, raspberries, blueberries)

Peach & Mango Topping

  • 1 cup diced peaches
  • 1 cup diced mango
  • 1/4 cup sugar
  • 1/4 cup water

Instructions:

  1. Preheat oven to 350°F.
  2. Mix the Graham cracker crumbs, sugar, and melted butter and press into the bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes and let it cool.
  4. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until smooth.
  5. Add eggs, one at a time, and mix well.
  6. Stir in the red wine and mixed berries.
  7. Pour the filling over the cooled crust and smooth the top.
  8. Bake the cheesecake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
  9. Let the cheesecake cool to room temperature then refrigerate for at least 4 hours.
  10. In a saucepan, simmer the peaches, mango, sugar, and water until the fruit is soft and the liquid is syrupy.
  11. Serve the cheesecake with the peach and mango topping.
