Celestial Delight Cheesecake Recipe

Vanilla Wafer Base

  • 1 1/2 cups of crushed vanilla wafers
  • 1/4 cup of unsalted butter, melted

Champagne & Raspberry Filling

  • 24 oz of Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup of granulated white sugar
  • 1/2 cup of sour cream
  • 3 tablespoons of cornstarch
  • 1/2 cup of raspberry sauce
  • 1/4 cup of champagne
  • 4 large eggs, at room temperature

Orange & Vanilla Topping

  • 1 cup of heavy cream
  • 1/4 cup of granulated white sugar
  • 1 teaspoon of orange zest
  • 1/2 teaspoon of vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix together the crushed vanilla wafers and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10 minutes, then let it cool completely on a wire rack.
  5. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  6. Add the sugar, sour cream, cornstarch, raspberry sauce, and champagne, and beat until well combined and creamy.
  7. Add the eggs one at a time, beating on low speed until just combined after each addition.
  8. Pour the cheesecake mixture onto the cooled crust.
  9. Bake the cheesecake for 50-60 minutes or until the edges are set and the center jiggles slightly.
  10. Let the cheesecake cool to room temperature before refrigerating for at least 4 hours or overnight.
  11. In a medium bowl, use an electric mixer to beat the heavy cream, sugar, orange zest, and vanilla extract until stiff peaks form.
  12. Serve the cheesecake with a dollop of the orange & vanilla topping on each slice.
