Celestial Delight Cheesecake Recipe
Vanilla Wafer Base
- 1 1/2 cups of crushed vanilla wafers
- 1/4 cup of unsalted butter, melted
Champagne & Raspberry Filling
- 24 oz of Norman's Kosher Cholov Yisroel Cream Cheese
- 1 cup of granulated white sugar
- 1/2 cup of sour cream
- 3 tablespoons of cornstarch
- 1/2 cup of raspberry sauce
- 1/4 cup of champagne
- 4 large eggs, at room temperature
Orange & Vanilla Topping
- 1 cup of heavy cream
- 1/4 cup of granulated white sugar
- 1 teaspoon of orange zest
- 1/2 teaspoon of vanilla extract
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, mix together the crushed vanilla wafers and melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool completely on a wire rack.
- In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
- Add the sugar, sour cream, cornstarch, raspberry sauce, and champagne, and beat until well combined and creamy.
- Add the eggs one at a time, beating on low speed until just combined after each addition.
- Pour the cheesecake mixture onto the cooled crust.
- Bake the cheesecake for 50-60 minutes or until the edges are set and the center jiggles slightly.
- Let the cheesecake cool to room temperature before refrigerating for at least 4 hours or overnight.
- In a medium bowl, use an electric mixer to beat the heavy cream, sugar, orange zest, and vanilla extract until stiff peaks form.
- Serve the cheesecake with a dollop of the orange & vanilla topping on each slice.
