Say cheese! Meet your new personalized cheesecake recipe:

Rocky Road Cheesecake

Ingredients:

  • 12 ounces of vanilla wafer cookies
  • 6 tablespoons of unsalted butter, melted
  • 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened (24 ounces total)
  • 1 cup of granulated sugar
  • 4 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1 cup of mini marshmallows
  • 1/2 cup of semisweet chocolate chips
  • 1/2 cup of chopped pecans

Instructions:

  1. Preheat oven to 350°F.
  2. Pulse the vanilla wafer cookies in a food processor until finely ground. Add melted butter and pulse until combined.
  3. Press the vanilla wafer mixture evenly onto the bottom of a 9-inch springform pan.
  4. In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar until smooth.
  5. Add eggs, one at a time, beating well after each addition.
  6. Stir in vanilla extract and salt.
  7. Fold in mini marshmallows, semisweet chocolate chips, and chopped pecans.
  8. Pour cheesecake mixture into the prepared crust.
  9. Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and crack the oven door. Let the cheesecake cool for 30 minutes in the oven.
  11. Remove the cheesecake from the oven and let it cool to room temperature on a wire rack.
  12. Cover and refrigerate until chilled.

Whipped Cream Topping:

  • 1 cup of heavy cream
  • 2 tablespoons of powdered sugar
  • 1/2 teaspoon of vanilla extract

Topping Instructions:

  1. In a large mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Spread whipped cream over the top of the chilled cheesecake.
  3. Garnish with additional mini marshmallows, chopped pecans, and semisweet chocolate chips if desired.
