Say cheese! Meet your new personalized cheesecake recipe:
Rocky Road Cheesecake
Ingredients:
- 12 ounces of vanilla wafer cookies
- 6 tablespoons of unsalted butter, melted
- 3 containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened (24 ounces total)
- 1 cup of granulated sugar
- 4 large eggs
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- 1 cup of mini marshmallows
- 1/2 cup of semisweet chocolate chips
- 1/2 cup of chopped pecans
Instructions:
- Preheat oven to 350°F.
- Pulse the vanilla wafer cookies in a food processor until finely ground. Add melted butter and pulse until combined.
- Press the vanilla wafer mixture evenly onto the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar until smooth.
- Add eggs, one at a time, beating well after each addition.
- Stir in vanilla extract and salt.
- Fold in mini marshmallows, semisweet chocolate chips, and chopped pecans.
- Pour cheesecake mixture into the prepared crust.
- Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the oven door. Let the cheesecake cool for 30 minutes in the oven.
- Remove the cheesecake from the oven and let it cool to room temperature on a wire rack.
- Cover and refrigerate until chilled.
Whipped Cream Topping:
- 1 cup of heavy cream
- 2 tablespoons of powdered sugar
- 1/2 teaspoon of vanilla extract
Topping Instructions:
- In a large mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread whipped cream over the top of the chilled cheesecake.
- Garnish with additional mini marshmallows, chopped pecans, and semisweet chocolate chips if desired.
