Ingredients:

  • 2 cups Vanilla wafer crumbs
  • 1/2 cup unsalted butter, melted
  • 4 containers (8 oz each) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 1/2 cups granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup caramel sauce (homemade or store-bought)

Instructions:

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan and wrap the bottom with aluminum foil.
  2. In a medium bowl, combine the Vanilla wafer crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan and slightly up the sides. Set aside.
  3. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until creamy and smooth.
  4. Add in the sugar, flour, and vanilla extract, beat until well combined.
  5. Beat in the eggs one at a time, mixing well after each addition.
  6. Stir in the heavy cream and mix until smooth.
  7. Pour the mixture over the prepared crust and smooth the top with a spatula.
  8. Bake for 60-70 minutes or until the edges are lightly golden brown and the center is almost set.
  9. Turn off the oven, crack the door and leave the cheesecake inside for 30 more minutes, then remove it from the oven.
  10. Cool cheesecake on the counter for about an hour, then refrigerate for at least 4 hours or overnight.
  11. To serve, remove the cheesecake from the pan and drizzle caramel sauce on top.
