Ingredients:

  • 2 cups Vanilla wafer crumbs
  • 1/3 cup melted butter
  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup white sugar
  • 1 tsp vanilla extract
  • 1/4 cup brewed coffee
  • 1/4 cup mascarpone cheese
  • 3 eggs
  • 2 cups mini marshmallows

Instructions:

  1. Preheat your oven to 325°F (165°F) degrees.
  2. In a mixing bowl, combine the Vanilla wafer crumbs and melted butter. Press the mixture evenly into the bottom of a 9-inch springform pan. Set aside.
  3. In another mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla extract until creamy and smooth. Add in brewed coffee, mascarpone cheese, and eggs, mixing until well combined.
  4. Pour the filling on top of the vanilla wafer crust, spreading it evenly. Bake the cheesecake for 45-50 minutes until the edges are golden brown, and the filling is set.
  5. Let the cheesecake cool down to room temperature, then top it off with mini marshmallows and broil it for 2-3 minutes until the marshmallows are golden brown.
  6. Cover the cheesecake with cling film and refrigerate for at least 4 hours or overnight before serving.
