Ingredients:

  • 1 cup pitted dates, chopped
  • 1/2 cup walnuts, chopped
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 16 oz. Norman's Kosher Cholov Yisroel Cream Cheese
  • 1/2 cup sugar
  • 3 large eggs
  • 1 tsp. vanilla extract
  • 1 cup whipped cream, for topping
  • 1/4 cup walnuts, chopped, for garnish

Instructions:

  1. Preheat the oven to 325°F.
  2. In a food processor, blend the chopped dates and walnuts until they form a sticky paste. Press the mixture into the bottom of an 8-inch springform pan to form the crust.
  3. In a mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar, olive oil, and lemon juice until smooth.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the vanilla extract.
  6. Pour the filling over the prepared crust.
  7. Bake for 40-50 minutes or until the center is set.
  8. Cool the cheesecake to room temperature.
  9. Top the cheesecake with whipped cream and chopped walnuts.
  10. Chill the cheesecake for at least 1 hour in the refrigerator before serving.
