Citrus Passion Cheesecake with Quinoa Crust
Ingredients:
1 cup cooked and cooled quinoa
4 tablespoons melted butter
1/4 cup granulated sugar
1/4 teaspoon salt
16 oz. Norman's Kosher Cholov Yisroel Cream Cheese, room temperature
1/2 cup granulated sugar
4 large eggs
1/2 cup passion fruit puree
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 cup blood orange segments
1/2 cup grapefruit segments
1/4 cup honey
Instructions:
Preheat the oven to 350°F.
In a small bowl, mix quinoa, melted butter, 1/4 cup sugar, and salt. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
In a large mixing bowl, beat the cream cheese until smooth. Add the 1/2 cup sugar and mix until combined.
Add eggs one at a time, beating after each addition. Add passion fruit puree, lemon juice, and vanilla extract and stir until well combined.
Pour the cheesecake filling on top of the quinoa crust. Bake for 50-60 minutes or until the edges are lightly browned and the center is almost set.
Let the cheesecake cool to room temperature then chill it in the refrigerator for at least 2 hours before serving.
Before serving, arrange the blood orange and grapefruit segments on top of the cheesecake and drizzle with honey.
