Ingredients:

  • 2 cups of Graham cracker crumbs
  • 2 tbsp of sugar
  • 1/2 cup of unsalted butter, melted
  • 24 oz of Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup of sugar
  • 1 tbsp of dried lavender
  • 1 tsp of vanilla extract
  • 4 eggs
  • 1/2 cup of peach preserves
  • 1/2 cup of mango, diced
  • 1 tbsp of lemon juice

Instructions:

  1. Preheat the oven to 350°F.
  2. Combine Graham cracker crumbs, 2 tbsp of sugar, and melted butter in a bowl. Mix well.
  3. Press the mixture onto the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes and let it cool.
  5. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until creamy.
  6. Add 1 cup of sugar, dried lavender, and vanilla extract. Mix until well combined.
  7. Add the eggs, one at a time, beating well after each addition.
  8. Pour the mixture over the cooled crust and bake for 35-40 minutes, or until the center is almost set.
  9. Let it cool to room temperature and then chill in the refrigerator for at least 2 hours.
  10. In a saucepan, heat the peach preserves, diced mango, and lemon juice over low heat until well combined.
  11. Remove from heat and let it cool to room temperature.
  12. Pour the peach-mango topping over the cheesecake and chill for another 30 minutes.
  13. Slice and serve chilled.
