Citrus Dream Cheesecake Recipe
Pistachio Crumble Base
1 cup pistachios, finely chopped
1 cup graham cracker crumbs
1/4 cup sugar
1/4 teaspoon salt
1/2 cup unsalted butter, melted
Passion Fruit Filling
16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup sugar
1/2 cup sour cream
4 large eggs
1/4 cup passion fruit puree
1 tablespoon lemon zest
1 teaspoon vanilla extract
Grapefruit & Honey Topping
1 large grapefruit, segmented and chopped
3 tablespoons honey
Instructions
Preheat the oven to 350°F. Grease a 9-inch springform pan and line with parchment paper.
Make the crust: In a medium bowl, combine the pistachios, graham cracker crumbs, sugar, salt, and melted butter. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool.
Make the filling: In a large bowl, use an electric mixer to beat the cream cheese until smooth. Add the sugar and beat until well combined. Mix in the sour cream, eggs, passion fruit puree, lemon zest, and vanilla extract. Pour the mixture over the cooled crust, smoothing the top with a spatula.
Bake the cheesecake for 45-50 minutes or until the edges are lightly golden and the center is set. Cool the cheesecake to room temperature, and then chill for at least 2 hours in the refrigerator.
Make the topping: In a small saucepan, warm the honey over low heat. Add the grapefruit and cook for about 3 minutes or until the fruit has slightly softened. Remove from the heat and let it cool to room temperature.
Top the chilled cheesecake with the grapefruit and honey mixture. Serve chilled, and enjoy!
