Cheesy Peanut Butter Cup Cheesecake
Ingredients:
10 oz Parmesan & Garlic crackers, crushed
6 tbsp unsalted butter, melted
4 containers (32 oz) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
1 1/2 cups granulated sugar
3/4 cup sour cream
4 tsp all-purpose flour
1 tsp vanilla extract
4 large eggs
20 Peanut Butter Cups, chopped
Instructions:
Preheat oven to 350°F.
In a bowl, mix the crushed Parmesan & Garlic crackers and melted butter together. Press the mixture firmly into the bottom and up the sides of a springform pan.
In a separate bowl, beat the cream cheese, sugar, sour cream, flour, and vanilla extract until creamy.
Add the eggs one at a time, being sure to mix well after each addition.
Pour the mixture into the prepared crust, and bake for 50-60 minutes, or until the center is almost set.
Remove the cheesecake from the oven and allow it to cool completely.
Once cooled, sprinkle the chopped Peanut Butter Cups on top of the cheesecake, and serve.
