Crush the Oreo cookies until they resemble fine crumbs. Add melted butter and mix until well combined. Press the Oreo mixture into the bottom of a 9-inch springform pan.
Beat the Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and vanilla extract in a mixing bowl until well combined. Add eggs one at a time, beating well after each addition. Add heavy cream and salt, and mix until smooth.
Pour the cream cheese mixture over the Oreo crust, and smooth the top with a spatula.
Bake until the center is almost set, about 50-60 minutes. Cool the cheesecake to room temperature, then refrigerate for at least 3 hours or overnight.
Spread whipped cream on top of the cheesecake. Then spoon cherry pie filling on top of the whipped cream.
