Cheesecake Supreme
Chia Seed Base
- 1.5 cups almond flour
- 1/4 cup chia seeds
- 2 tbsp sugar
- 6 tbsp melted butter
New York-Style Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup sugar
- 1 tsp vanilla
- 4 eggs
Berries & Cream Topping
- 1 cup heavy cream
- 2 tbsp sugar
- 1/2 cup assorted berries (such as blueberries, raspberries, and strawberries)
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, combine the almond flour, chia seeds, sugar, and melted butter. Mix well.
- Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
- In a separate mixing bowl, beat the cream cheese until smooth. Add the sugar and vanilla and mix well.
- Add the eggs one at a time, mixing well after each addition.
- Pour the filling onto the cooled crust.
- Bake for 45-50 minutes, until the edges are set and the center is slightly jiggly.
- Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
- In a mixing bowl, beat the heavy cream until soft peaks form. Add the sugar and mix well.
- Serve the cheesecake topped with berries and whipped cream.
