Cheesecake Supreme

Chia Seed Base

  • 1.5 cups almond flour
  • 1/4 cup chia seeds
  • 2 tbsp sugar
  • 6 tbsp melted butter

New York-Style Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 4 eggs

Berries & Cream Topping

  • 1 cup heavy cream
  • 2 tbsp sugar
  • 1/2 cup assorted berries (such as blueberries, raspberries, and strawberries)

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine the almond flour, chia seeds, sugar, and melted butter. Mix well.
  3. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
  4. In a separate mixing bowl, beat the cream cheese until smooth. Add the sugar and vanilla and mix well.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the filling onto the cooled crust.
  7. Bake for 45-50 minutes, until the edges are set and the center is slightly jiggly.
  8. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  9. In a mixing bowl, beat the heavy cream until soft peaks form. Add the sugar and mix well.
  10. Serve the cheesecake topped with berries and whipped cream.
