Citrus Dream Cheesecake

Ingredients:

  • 1 package shortbread cookies
  • 4 tablespoons unsalted butter, melted
  • 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 1 can sliced pineapple, drained
  • 2 kiwi, peeled and sliced

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan.
  2. Pulse the shortbread cookies in a food processor until finely ground. Add melted butter and pulse to combine. Press the crumb mixture into the bottom of the springform pan. Bake for 10 minutes, or until golden. Remove from the oven and let cool.
  3. In a large bowl, using an electric mixer, beat Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add sugar and vanilla extract and beat until well combined. Add eggs one at a time, beating well after each addition. Stir in orange juice, lime juice, and lemon juice.
  4. Pour the cream cheese mixture over the cooled crust. Bake until the edges are set and the center is slightly jiggly, about 45-60 minutes. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 30 minutes. Remove from oven and let cool completely.
  5. Arrange the sliced pineapple and kiwi on top of the cheesecake. Serve chilled.
