Acai Passion Brownie Cheesecake
Acai Berry Base
- 8 oz graham crackers, crushed
- 1/4 cup sugar
- 6 tbsp unsalted butter, melted
- 1/2 cup Acai berry puree
Passion Fruit Filling
- 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 1/4 cups sugar
- 4 eggs
- 1/4 cup passion fruit puree
Fudge Brownie Topping
- 1/2 cup unsalted butter
- 4 oz semisweet chocolate, chopped
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
Directions
- Preheat oven to 350°F.
- In a small bowl, mix together graham cracker crumbs, sugar, melted butter, and Acai berry puree.
- Press mixture into the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes, then let cool.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, beating well after each addition.
- Stir in passion fruit puree until well blended.
- Pour mixture over the cooled crust.
- Bake for 45-50 minutes, or until center is almost set.
- Meanwhile, make the brownie topping. In a medium saucepan, melt butter and chocolate over low heat.
- Remove from heat and stir in sugar, eggs, and vanilla extract.
- Whisk in flour until well combined.
- Pour brownie batter over the top of the cheesecake and spread into an even layer.
- Return cheesecake to oven and bake for an additional 10-15 minutes, or until brownie is set.
- Let cheesecake cool to room temperature, then refrigerate for at least 4 hours before serving.
