Acai Passion Brownie Cheesecake

Acai Berry Base

  • 8 oz graham crackers, crushed
  • 1/4 cup sugar
  • 6 tbsp unsalted butter, melted
  • 1/2 cup Acai berry puree

Passion Fruit Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 1/4 cups sugar
  • 4 eggs
  • 1/4 cup passion fruit puree

Fudge Brownie Topping

  • 1/2 cup unsalted butter
  • 4 oz semisweet chocolate, chopped
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour

Directions

  1. Preheat oven to 350°F.
  2. In a small bowl, mix together graham cracker crumbs, sugar, melted butter, and Acai berry puree.
  3. Press mixture into the bottom of a 9-inch springform pan.
  4. Bake for 8-10 minutes, then let cool.
  5. In a large mixing bowl, beat cream cheese and sugar until smooth.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in passion fruit puree until well blended.
  8. Pour mixture over the cooled crust.
  9. Bake for 45-50 minutes, or until center is almost set.
  10. Meanwhile, make the brownie topping. In a medium saucepan, melt butter and chocolate over low heat.
  11. Remove from heat and stir in sugar, eggs, and vanilla extract.
  12. Whisk in flour until well combined.
  13. Pour brownie batter over the top of the cheesecake and spread into an even layer.
  14. Return cheesecake to oven and bake for an additional 10-15 minutes, or until brownie is set.
  15. Let cheesecake cool to room temperature, then refrigerate for at least 4 hours before serving.
