  • 1 cup almond flour
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/2 tsp vanilla extract
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 cup mixed berries (such as blueberries, raspberries, and blackberries)

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a bowl, combine almond flour, coconut oil, honey, and 1/2 teaspoon vanilla extract. Mix until well combined. Press mixture onto the bottom of the prepared pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Beat in eggs, lemon juice, and 1 teaspoon vanilla extract until well combined. Fold in chopped strawberries. Pour mixture over crust.
  4. Bake for 35-40 minutes or until set. Let cool to room temperature, then refrigerate for at least 2 hours or overnight.
  5. In a separate mixing bowl, beat heavy cream and powdered sugar until stiff peaks form. Spread mixture on top of cheesecake. Arrange mixed berries on top. Serve chilled.
