Matcha & Sesame Cheesecake with Granola & Maple Filling and Whipped Cream Topping
Ingredients:
- 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1/4 cup matcha powder
- 1/4 cup sesame seeds
- 1 1/2 cups granola
- 1/4 cup maple syrup
- 1 cup heavy whipping cream
Instructions:
- Preheat the oven to 350°F. Grease a 9-inch springform pan with non-stick cooking spray.
- In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, matcha powder, and sesame seeds until evenly combined.
- Spread the granola on the bottom of the prepared pan, then drizzle with maple syrup.
- Pour the cream cheese mixture over the granola, using a spoon to smooth it into an even layer.
- Bake for 35-40 minutes, or until the edges are set but the center still jiggles slightly.
- Let the cheesecake cool to room temperature, then chill in the refrigerator for at least 2 hours before slicing and serving.
- Before serving, whip the heavy cream until soft peaks form. Spread over the top of the cheesecake.
