Matcha & Sesame Cheesecake with Granola & Maple Filling and Whipped Cream Topping

Ingredients:

  • 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup matcha powder
  • 1/4 cup sesame seeds
  • 1 1/2 cups granola
  • 1/4 cup maple syrup
  • 1 cup heavy whipping cream

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan with non-stick cooking spray.
  2. In a large mixing bowl, beat the softened Norman's Kosher Cholov Yisroel Cream Cheese and granulated sugar together until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract, matcha powder, and sesame seeds until evenly combined.
  5. Spread the granola on the bottom of the prepared pan, then drizzle with maple syrup.
  6. Pour the cream cheese mixture over the granola, using a spoon to smooth it into an even layer.
  7. Bake for 35-40 minutes, or until the edges are set but the center still jiggles slightly.
  8. Let the cheesecake cool to room temperature, then chill in the refrigerator for at least 2 hours before slicing and serving.
  9. Before serving, whip the heavy cream until soft peaks form. Spread over the top of the cheesecake.
