Apple Pecan Cheesecake with Berries & Cream Topping
Ingredients:
1 1/2 cups Apple Pie crust (crumbled)
2 oz Pecans (chopped)
18 oz Norman's Kosher Cholov Yisroel Cream Cheese (softened)
1 cup Granulated Sugar
1/2 cup Sour Cream
1 tsp Vanilla Extract
4 Eggs (room temperature)
1/2 cup Mixed Berries (for topping)
1/2 cup Whipped Cream (for topping)
Directions:
Heat the oven to 325°F.
In a mixing bowl, combine the crumbled apple pie crust and chopped pecans. Mix together until evenly distributed and press in the bottom of a 9-inch springform pan.
In a large mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, sour cream, and vanilla extract with an electric mixer until smooth.
Add the eggs one at a time, mixing well after each addition.
Pour the cheesecake mixture over the apple pecan crust.
Bake the cheesecake for 55-60 minutes or until the center is almost set.
Let the cheesecake cool for 30 minutes and then refrigerate for at least 4 hours or overnight.
Before serving, remove the cheesecake from the pan and top with mixed berries and whipped cream.
